OUR OVENS

Pacific Oven hand built ovens are covered in a substantial zinc-plated steel shell, providing redundant stability, integrity, and safety. The large front opening and cooking area ensures versatility for a wide range of culinary choices, from pizza to bread, to roast turkey, and other meats. A banked area of coals and fire can be maintained while cooking if the benefit of wood flavor is desired, or the fire can be removed for more delicate items such as bread, casseroles, desserts, etc. Even after the fire is removed, the mass of the oven maintains temperature for a long time, with a usual 10 to 20 degree decline in temperature per hour, depending on outside temperature and if further layers of decorative masonry are added.
The very wide range of temperatures that can be maintained further expand the nearly limitless range of options for cooking in the Pacific Oven wood-fired oven. Slow cooking of ribs, brisket and other favorites, grilling of steaks, sausage, burgers can also be done inside the oven, as well as low temperature smoking of fish, jerky etc. A world of traditional wood-fired cooking possibilities awaits!
